Batters for Pre-frying

A good number of chippers pre-fry their fish, this blanching method requires a different type of batter when compared to a cook & serve method.

Ideal choices for pre-frying are our Batter Flour Standard and Batter Flour Light. These base products are cost-effective and especially developed for takeaway operators, as ease of use, efficiency, and consistent quality are essential.

Our Batter Mix Light, Pale Yellow, Light Yellow, and Yellow are all suitable for both pre-frying and cook & serve, offering flexibility without compromising quality.

Regenerating batters

Regeneration is increasingly important in professional kitchens where speed, planning, and consistent quality are paramount.

Our batter mixes are unique because they can be perfectly regenerated in a combi steamer, without losing any crispiness or colour. This keeps the pre-fried product light, crispy, and appealing, as if it was fried there and then, preserving its flavour and appearance. 

Regeneration is easily done in a combi steamer at 190°C with 5-10% steam.
